Thanks for bearing with me over my moving hiatus! I’m trying to get back to posting regularly, although I may miss posts from time to time as things are still super busy here. Although we moved about a week and a half ago now, it’s taking me quite a while to unpack all of our possessions. I’ve found homes for many things but there are still plenty of piles begging to be put away. Organizing from scratch is tough!
I didn’t even make a meal plan last week, which was not the best idea because I ended up spending a lot of time worrying about what we’d have for dinner the next day. I’m done with that. So, here’s what we’ll be eating this week:
Wednesday: Baked hake with veggies
Thursday: Roast with veggies
Friday: Meat sauce, zucchini pasta, salad
Saturday: Chicken soup
Sunday: Roasted chicken legs with veggies
Monday: Ham with veggies (I’ll be trying out Mindy’s recipe!)
Tuesday: Taco salad
I’ve kept cooking to a minimum over the past few weeks; well, as much as a minimum as you can ever do when you’re still following the GAPS diet. But in any case, I don’t have any exciting kitchen escapades to share. I’m looking forward to new escapades, though, because I love our new kitchen! Sometime in the future I will take some pictures to show you all. It is still decidedly a small kitchen, but such a step up from what we were working in before that Jesse and I are both thrilled.
The other thing that I’m really excited about is joining a poultry CSA. I learned about Jodar Farms from my friend Mindy a while ago and last week I decided to join their poultry CSA. From May through December we will be getting monthly orders of chickens. I’ve always gotten my chickens from Grant Farms but their supply has been extremely low to nonexistent over the past several months so I decided it was time to branch out. I wasn’t wild about adding yet another food pickup to my schedule but this is at least only monthly so I don’t think it will be too bad. Our first pickup is later today and I am so excited! We’ve been eating nearly all beef lately and I’m really ready to have more chicken back in my life. (Yes, it is the simple things in life that make me happy. )
