Weekly Meal Plan: June 27-July 3

It is still super hot here. On Monday they said that we might break the record for longest stretch of days over 100 degrees. Woohoo. Not exactly the kind of record I aspire to. I am so, so glad that we have air conditioning. It really hasn’t been cooling down very much at night so I don’t think we would be managing very well without some artificial cooling.

We spent most of the weekend indoors, hanging out and trying to catch up on cleaning duties that we’d been neglecting the last few weeks while being on intro and then (in my case) getting sick. Putting away those miscellaneous items that are still homeless after our move was also on my list, but I ran out of time for that. In my opinion those last few things are always the hardest, but I really just need to buckle down and do it! Once I finish that I should also be able to spend some time hanging up the rest of our wall decorations.

Here’s what we’ll be eating this week:

Wednesday: Chicken stir-fry with peanut sauce and veggies

Thursday: Pesto beef and veggie skillet with salad

Friday: Southwestern chicken soup

Saturday: Roast chicken with veggies

Sunday: Meatballs (new batch!) with veggies

Monday: Taco salad

Tuesday: Beef roast in the crockpot, veggies

Other News

No crazy kitchen experiments here. Rather, a return to the tried and true. I finally tried some of Jesse’s homemade chocolates after going chocolate-free for intro. Yum. And no reaction so far, so of course we had to make a batch of this awesome mint chocolate chip ice cream this weekend. Jesse also made an herbed batch of these almond flour biscuits, which as usual came out delicious.

I did also try to make a batch of mayonnaise, but that was a complete disaster. I was showing Jesse how to make mayonnaise and everything was going great until we got to the very end, when for some reason the previously thick mayonnaise suddenly separated into a liquidy mess. Two attempts later the mayonnaise still refused to thicken so I gave up. Jesse is eating the concoction anyway, but I wish it could’ve been tasty mayonnaise rather than the dressing-like substance we ended up with.

I may be posting less than usual for a while. Last Wednesday I started the first of a series of thirteen rolfing appointments at the local Rolf Institute. Since it’s a teaching setting, I have two appointments every week for the next six weeks, so for a while I’ll be spending about five hours a week at appointments. Depending on what else is going on, I may not have as much time as usual to post for a while.

(If you’ve never heard of rolfing, here’s a little bit of information on it. Jesse went to rolfing in the spring and found it a very worthwhile experience, so he’ll actually be doing a guest post about rolfing sometime in the near future.)

    Megh, here is an Amazon link to the book my Yoga teacher recommended, which got me started on my obsession with Rolfing. Some sections are pretty detailed, but the book is recommended for the interested lay person as well as professionals.
