Exciting news: we’ve planted the rest of our container garden! I’ll be writing about it later in the week, but I just couldn’t help mentioning it here, too. We spent a lot of last weekend buying everything and then putting it all into containers.
I’m also really looking forward to our CSA starting up in about three weeks. I’m super jealous of all of you lucky people who have been enjoying fresh produce for a while now, but not much is ready to harvest here until June! We’ll be getting the same “couple”-sized vegetable share that we got the last two years. It seems to be the right size for us, although I do need to get better about using up certain veggies…
I still need to decide whether we should also get a “preserving” share again. Preserving shares give you larger amounts of certain produce so that you can preserve it for the rest of the year. Last year I ended up feeling conflicted about our share. Some items worked out really well, but others were a bit of a bust. It also doesn’t help that the prices aren’t spectacular on most items, contrary to what you might expect when buying produce in bulk. I will have to do some more thinking on this front.
Anyway, while we’re still waiting for tasty CSA produce, here’s what we’ll be eating this week:
Wednesday: Meatballs with squash, cabbage
Thursday: Pasta sauce with zucchini noodles, salad
Friday: Baked hake with tomatoes, salad
Saturday: Beef sirloin kabobs with peanut sauce, stir-fried veggies
Sunday: Baked wahoo with veggies
Monday: Taco salad
Tuesday: Roast with veggies
No particularly exciting news this week. For some reason I have not been feeling much like cooking so I’ve been putting off those stocking up tasks that need doing, like making yogurt, starting a new batch of kombucha and soaking and roasting peanuts. Sometimes I just get into anti-cooking moods. I still have to make all our main meals but extra things fall by the wayside for the while. Can anyone relate?
Each of those is four cups. Woo! That will make a lot of ice cream and smoothies.
In non-food news, we watched the eclipse on Sunday. Jesse is getting his Ph.D. in astronomy so viewing noteworthy astronomical events is pretty much mandatory here. We had to wait quite a while since there was a giant cloud covering the sun, but eventually it moved enough that we could see the eclipse. Our friend set up his telescope and projected the image onto a piece of cardboard:
