Saturday marked the end of my fifteenth month on GAPS. I thought this would be an excellent time to reflect back on my GAPS experience so far. Part 1 will detail how I found real foods, since finding real foods is really what led me to GAPS. Homemade Mint Chocolates

We love chocolates here. A few years ago I started experimenting with making our own chocolate chips. Jesse became so enthralled with the idea that he soon took over. This is his recipe for mint chocolates, one of our favorites.

These chocolates are not overly sweet tasting. Since sweetness preference varies from person to person, I highly suggest that you taste your chocolate mixture before pouring it into your molds. You can easily add additional sweetener if you prefer a sweeter tasting chocolate.

Homemade Mint Chocolates

Ingredients:

2 cups virgin coconut oil

1 1/4 cups cocoa powder

1 3/4 teaspoons peppermint extract

2 tablespoons honey

10 drops SweetLeaf clear liquid stevia

Real Food Finds at Costco

One of the ways that I save money on real food is by shopping at my local Costco. Although I initially wondered whether it would be worth it to maintain our Costco membership as we were beginning to transition to real foods, I have found that Costco is an excellent source for certain real food and natural living items. We visit Costco once a month or so and usually spend around $80 at a time. (More if we are buying a lot of butter!)
