GAPS-style Swedish Meatballs

This Swedish meatball recipe is derived from a traditional recipe that Jesse’s great-grandmother brought with her when she immigrated from Sweden to America. Over the years it has gone through various modifications depending on the preferences of each family member.  Most recently Jesse and I modified it to make it GAPS-legal. At this point I would no longer describe this as a traditional Swedish recipe, but we still think it’s absolutely delicious.

This recipe will make six pounds of meatballs. Our motto is that if you’re going to make meatballs, you might as well make a lot of meatballs. Meatballs freeze well and making a big batch means you spend less time prepping and cleaning up overall, so every few months we make six pounds and then get to eat meatballs out of the freezer for several weeks.…

Beef/Pork Apple Sausages (GAPS-legal)

These apple sausages are amazing! Slightly sweet from the honey and apple but with a great meaty flavor. I’ve eaten them three times already in the last three days. They go well with vegetables for dinner as well as with eggs for breakfast. I’d guess that they’d also be great in recipes requiring breakfast sausages.

This is a great recipe to make for your freezer. Cook all of the sausages at once and then freeze in a single layer. Once frozen, store the sausages in a container in your freezer for easy future meals.

Ingredients:

1 pound ground beef (preferably grass-fed)

1 pound ground pork (preferably pastured)

2 large apples (I used Fuji)

1/2 medium onion

1 teaspoon dried sage

1/2 teaspoon cinnamon

2 teaspoons salt

1 teaspoon black pepper

1 tablespoon honey

Peanut Sauce Stir-fry (Soy-free, GAPS-legal)

Like my GAPS Pad Thai recipe, I wouldn’t describe this recipe as anything like authentic Thai food. It is, however, a very simple recipe that we greatly enjoy. If you like the idea of coconutty peanut butter plus vegetables and chicken, I’d recommend giving it a try.

Since I can’t handle spicy food, this recipe is not a bit spicy. If (like Jesse) you prefer more heat, add some cayenne pepper or red pepper flakes to your plate or straight to the pan while cooking.

As usual, feel free to vary the amount/type of vegetables. When in season, I have used green onions instead of whole onions and added sugar snap peas.…

GAPS for Beginners Series: Bone Broth

Bone broth is an integral part of the GAPS program. In addition to providing valuable, easily digestible nutrients, broth soothes and heals the gut lining. People on GAPS should consume broth every day. I like to eat my broth in soups, but you can also use it to cook meats or vegetables, make sauces, or even just drink it on its own with a meal.
