Make the Healthiest Soaked and Roasted Peanut Butter

Soaked and Roasted Peanuts and Peanut ButterLike other legumes, peanuts contain phytic acid and enzyme inhibitors which impair your body’s ability to access all of the nutrients contained in the peanuts. You can, however, make peanuts much more digestible and nutritious by soaking them in water overnight. While I still do sometimes buy just organic roasted peanut butter at the grocery store, when possible I prefer to soak and roast my own peanuts to to ensure we’re getting maximum nutrients.

While you can make peanut butter with peanuts that have been merely soaked and then dehydrated, I strongly advise against skipping the roasting step if you want your peanuts and peanut  butter to taste like the yummy commercial versions.…

Pad Thai-Inspired GAPS Stir-fry

I’m not sure how much this dish actually tastes like pad Thai. I have only had real pad Thai a couple of times so I don’t feel qualified to comment. Regardless, however, Jesse and I think this is a delicious stir-fry. Using the spaghetti squash intersperses a noodle-like texture throughout the dish. It’s not the same as rice or wheat noodles but it’s quite good in its own right.

Amounts of vegetables are approximate; feel free to modify based on your preference. If you increase the total volume of vegetables I would recommend also increasing the amount of sauce to compensate.…

How to Make Water Kefir

How to Make Water Kefir A Healthy Probiotic Beverage!

I love water kefir. Fruity, fizzy and slightly sweet, it adds a bit of variety to my largely water-dominated beverage choices.

If you haven’t tried water kefir before, I encourage you to do so! Making it requires a bit of time every two days but it’s an easy process that becomes complete routine after a little while.

Drinking water kefir is a great way to get more fermented foods into your diet. Like all raw fermented foods, water kefir is full of beneficial bacteria that are so essential to good health.

How to Find Water Kefir Grains

Water kefir is made with water kefir grains, symbiotic colonies of yeast and bacteria that consume sugar while producing good bacteria.…

Italian-Seasoned Ground Beef

I’ve had a hard time finding GAPS-legal Italian sausage that is both grass-fed/pastured and also within my price range. Since we still wanted to use Italian-flavored meat for pasta sauce and pizza, we came up with this recipe, which we call “Italian beef.”  I use beef because I’m always looking for more ways to eat grass-fed beef, but I’m sure that the recipe would also be very tasty with ground pork.

This recipe can easily be doubled (or tripled or quadrupled) to make a large amount of Italian beef for future meals. I usually cook a lot at once and then freeze it using my special method for freezing ground meat.…

Homemade Mint Chocolates

We love chocolates here. A few years ago I started experimenting with making our own chocolate chips. Jesse became so enthralled with the idea that he soon took over. This is his recipe for mint chocolates, one of our favorites.

These chocolates are not overly sweet tasting. Since sweetness preference varies from person to person, I highly suggest that you taste your chocolate mixture before pouring it into your molds. You can easily add additional sweetener if you prefer a sweeter tasting chocolate.
