Back when I was writing my coconut e-book, I had fun playing around with coconut butter as a gluten-free flour replacement. Recently I decided to revisit coconut butter to make a new recipe: chocolate coconut butter cookies! I’m not currently eating eggs so this recipe is egg-free as well as naturally gluten-free and grain-free. These cookies are soft, moist, mildly sweet, and have an almost cake-like texture. They’re a big hit in my house. I hope you enjoy them, too!…

Chocolate Cashew Milk Ice Cream: Dairy-free, GAPS, Paleo

Chocolate Cashew Milk Ice Cream: Dairy-free, GAPS and Paleo-approved!

We’re lactose intolerant but we love ice cream in my house, so we eat a lot of coconut ice cream. I know that not everyone likes the flavor of coconut, though, so last time I felt like making ice cream I decided I’d try my hand at another type of ice cream. I had some raw cashews in my freezer, so I figured, why not make cashew milk ice cream? I wasn’t sure how strong the cashew flavor would be, so I decided I’d start with chocolate cashew milk ice cream, since chocolate does a great job of competing with other strong flavors.…

Win 2 sets of silicone chocolate molds! Great for making your own chocolates, coconut oil/butter bites, or gelatin snacks!

One of my favorite unique kitchen tools is our set of silicone chocolate molds. We use them to make homemade chocolates, various coconut oil delights, and high-protein gelatin snacks, plus a ton of other great recipes that you can find in my e-book. If you’re interested in making your own coconut oil treats and/or homemade gelatin gummies, these are a fantastic tool to own. I recently decided I needed to diversify my silicone mold collection, so I purchased this set of stars, shells, and heart molds. They’re great! The mint chocolates I made in them came out just as good as always.

Last fall I had to spend several months on an elimination diet that had me avoiding a ton of the foods I usually eat. Desperate for something fun that I could actually eat, I stumbled upon a recipe for cashew butter cookies from the Detoxinista. That same week I discovered organic roasted cashews at Costco, so of course I had to make the recipe. I modified it a bit to fit our food restrictions here, but thankfully the cookies came out amazing! Since then I have made this recipe at least a dozen times. As I say about most conventional foods, my memory of chocolate chip cookies is pretty hazy, but these gluten-free flourless chocolate chip cookies taste so much like the chocolate chip cookies I used to make in my pre-real food days.…
